Pickles are generally fruits/ vegetables that are subjected to brining i.e. they are subjected to fermentation by socked in salt water to avoid fungal attacks. This could also mean that vegetables are marinated and then stored in vinegar, although other acid solutions may be utilized. Pickles are processed in order to produce a pH feature of less than 4.6. This is because bacteria are easily killed in such an acidity level.
